			<content:encoded><![CDATA[<p>One of the often-ignored topics in wedding planning is how to treat your vendors the day of the wedding, namely your DJ, Band, Wedding Planner, Photographer, Videographer or anyone that is present throughout the day of the event.  Although these people may not be on your guest list, it&#8217;s often common courtesy to at least assume they&#8217;ll want to eat a meal.  It&#8217;s something to think about as you make your guest list and submit your final head count for food.  You&#8217;ll also want to consider where the vendors will eat.  Will you have a table set aside for them that is part of the guest floor plan?  Will you have a table in a separate, private room?  Chances are good they&#8217;re only going to take a short break to eat, so choose accordingly.</p>
<p>There is one exception: when it comes to the officiant of your wedding, you should always count him/her and their significant other as an invited guest.  Send them an invitation like you would to any of your other guests. They&#8217;re the only vendor allowed to even go near the bar as well!  You definitely don&#8217;t want a drunk photographer taking your wedding photos.</p>

<p>Personally, I spoke to each of my vendors individually about their preferences.  I offered them the opportunity for one of the menu items and a seating arrangement.  In the end, all of my vendors preferred having a sandwich/condiments/hour d&#8217;oeuvres tray that they could quickly grab a bite from in a private section of the reception hall.  Whatever you choose, know that they&#8217;re all bound to be appreciative of your thoughtfulness (and maybe even do an extra-excellent job!).  Happy planning!</p>

			<content:encoded><![CDATA[<p>When I found <a rel="nofollow" href="http://www.hungry-girl.com/" target="_blank">Hungry Girl</a> last year, I thought I was in heaven. With recipes for everything from &#8220;fried&#8221; zucchini to chocolate lava cake (and a cute website to boot!), Hungry Girl stole my heart with her charming style and tasty treats.</p>
<p>I particularly love Hungry Girl&#8217;s pumpkin brownie cupcake recipe, which combines just two ingredients&#8212;one box of devil&#8217;s food cake mix and a can of pumpkin. Heaven!</p>
<p>I have made more than my fair share of her recipes, and yet, as I became more interested in food and nutrition, some of Hungry Girl&#8217;s other recipes started to concern me. The prevalence of ingredients like Splenda, powdered creamer and egg and meat substitutes on the Hungry Girl website raise interesting questions about whether it&#8217;s better to cut calories with a diet that has quite a bit of processed food in it, or if it&#8217;s more beneficial overall to switch to fresh, whole foods (even if ground beef has more calories than meat-like soy crumbles).</p>
<p style="text-align: left;">In either case, Hungry Girl offers a variety of recipes to suit any type of home chef, and is worth taking a look. But what do you think about her methods? While trying to prep for your big day, are you sticking to any particular diet? Would you pick low-cal processed food over whole foods?  Does Hungry Girl make you want to rant or rave?</p>

			<content:encoded><![CDATA[<p>For some reason, a bug seems to hit every woman who gets engaged&#8211;the diet bug.  Workouts get longer, meals get smaller and your favorite indulgences suddenly become temptations from the dark side.  I think my wedding day will always be the day I was in the best shape of my life.  Regardless, I like to maintain a healthy lifestyle, but with a raging sweet tooth, that&#8217;s hard to do.  Thankfully, I&#8217;ve found some amazing treats that fit in to my life&#8211;I only wish I&#8217;d found them sooner!</p>

<li><a rel="nofollow" href="http://www.vitalicious.com/" target="_blank">Vita-Muffins</a>:  These amazing 100 calorie muffins are now my breakfast staple-I have one a day and I&#8217;m still not sick of them.  Not only that, each muffin contains 4-7 grams of fiber, 4 grams of protein and 15 vitamins and mineral.  Sold as both muffins and muffin tops (yum!), they come in a variety of flavors and are available for ordering both <a rel="nofollow" href="http://www.vitalicious.com/store-vitamuffins.html" target="_blank">online </a>and in many local grocery stores (I get mine at Safeway in the frozen foods section!)  My favorite flavor is Deep Chocolate, with gooey chocolate chips, they taste like they&#8217;re fresh out of the oven!</li>

With only 4 grams of fat and anywhere from 148 to 350 calories, these donuts will curb your cravings without the guilt.  They aren&#8217;t fried (the process to make them is a well-kept secret) and they are only available <a rel="nofollow" href="http://www.holeydonuts.net/ebusiness/categories_eck1.asp?idCategory=2" target="_blank">online</a>, but after reading this <a rel="nofollow" href="http://www.thedailybalance.com/2009/04/14/try-it-donuts-for-breakfast-seriously/" target="_blank">review from The Daily Balance</a> (and checking out all of the delectable photos), I&#8217;m whipping out my credit card.  The Daily Balance post also has a discount for its&#8217; readers, so be sure to give it a look.</li>

<h3>Ingredients</h3>

<h3>For the galette rounds:</h3>

<li>1/4 cup milk</li>
<li>6 tablespoons (3/4 stick) unsalted butter, melted and cooled</li>
<li>3 large egg yolks</li>
<li>1 large whole egg</li>
<li>2 cups all-purpose flour</li>
<li>1 3/4 teaspoons salt</li>
<li>3 tablespoons chopped fresh chives</li>
<li>2 medium onions, chopped</li>
<li>1 tablespoon olive oil</li>
<li>1 tablespoon unsalted butter</li>
<li>1/2 pound thin or medium asparagus (about 15 spears, 1/4 to 1/2-inch thick), trimmed</li>
<li>1/4 pound thinly sliced prosciutto, cut crosswise into thin slices</li>
<li>1/3 cup soft mild goat cheese (about 4 ounces) room temperature</li>
<li>3 tablespoons chopped fresh chives</li>
</ul>
<h3>Directions</h3>
<p><span style="color: #000000;">To prepare the galette rounds: In bowl whisk together milk, butter, yolks, and whole egg. In another bowl whisk together flour, salt, and chives and stir into milk mixture until just combined. On a lightly floured surface with floured hands knead dough about 8 times, or until just smooth. Wrap dough in plastic wrap and chill for 1 hour. </span></p>
<p><span style="color: #000000;">Preheat oven to 450 degrees F. </span></p>
<p><span style="color: #000000;">Divide dough into 4 pieces. On a lightly floured surface with a floured rolling pin roll out each piece into an 8-inch round. Transfer rounds to 2 baking sheets and crimp edges decoratively. Chill dough 10 minutes and bake in middle and lower-third of oven about 5 minutes, or until golden brown. Transfer galettes to racks and cool completely. Galettes may be made 1 day ahead and kept in a sealable plastic bag at room temperature. </span></p>
<p><span style="color: #000000;">To prepare the onions: In a skillet cook onions in oil and butter with salt and pepper, to taste, over moderately low heat 15 minutes, or until golden. Transfer onions to a bowl to cool. </span></p>
<p><span style="color: #000000;">Have ready a large bowl of ice and cold water. Cut asparagus crosswise into 1/2-inch pieces and cook in a large saucepan of boiling salted water 3 to 5 minutes, or until just tender. Drain asparagus in a colander and transfer to bowl of ice and cold water to stop cooking. Lift asparagus out of water and pat dry. </span></p>
<p><span style="color: #000000;">Preheat oven to 400 degrees F. </span></p>
<p><span style="color: #000000;">Spread onions evenly onto galette rounds and top with prosciutto, asparagus, and goat cheese. Bake galettes on a baking sheet in middle of oven about 15 minutes, or until tops are lightly browned. Transfer galettes to a rack and cool. </span></p>
<p><span style="color: #000000;">Serve galettes, cut into wedges, at room temperature. Garnish with chopped chives. </span></p>

<ol>
<li>Four 1/2-inch-thick slices of peasant bread, halved diagonally</li>
<li>5 tablespoons extra-virgin olive oil</li>
<li>1 1/2 pounds white mushrooms</li>
<li>2 tablespoons unsalted butter</li>
<li>2 medium shallots, finely chopped</li>
<li>1 large garlic clove, minced</li>
<li>1 teaspoon chopped thyme</li>
<li>3 tablespoons water</li>
<li>Salt and freshly ground pepper</li>
<li>1/4 pound Fontina cheese, coarsely shredded (about 1 cup)</li>
<li>1 tablespoon chopped parsley</li>
</ol>

<li>Preheat the oven to 400°. Arrange the bread on a baking sheet and drizzle with 3 tablespoons of the olive oil. Toast for 12 minutes, until slightly golden around the edges. Turn the broiler on.</li>
<li>Meanwhile, thinly slice the mushrooms. In a large skillet, cook the butter over high heat until lightly browned, 2 minutes. Add the remaining 2 tablespoons of olive oil and the mushrooms and cook undisturbed until the mushrooms are browned on the bottom, 2 minutes. Continue to cook, stirring occasionally, until browned all over, 10 minutes. Add the shallots, garlic and thyme, lower the heat to moderate and cook until the shallots are tender, 5 minutes. Add the water and scrape up any browned bits from the bottom of the pan, then cook for 3 minutes longer. Season the mushrooms with salt and pepper and remove from the heat.</li>
<li>Spoon the mushroom mixture on the toasts and sprinkle the cheese on top. Broil for 2 minutes, or until the cheese is melted. Transfer the crostini to a platter, sprinkle with the parsley and serve.</li>

<p><strong>-Take it from me&#8211;Pick and choose your dishes carefully.</strong> You may want to have everything from mashed potatoes to sweet potatoes to green beans to, well&#8230;you name it (I know, because I did).   But, if you go overboard, you&#8217;ll not only be overworked, you&#8217;ll be overstuffed!  Pick your favorite dishes and make them well.  You&#8217;ll be pleased that you did!</p>
<p><strong>-Hit the grocery store early.</strong> Things DO sell out and the stores can be insane!  Have your menu prepared so you know exactly what to buy.</p>
<p><strong>-When purchasing a turkey, the rule of thumb is to have 1 to 1 1/4 pounds of turkey per guest.</strong> If you are having a massive feast, try roasting two smaller birds.  Turkeys 12 pounds or less tend to be juicier and there&#8217;s less chance of overcooking.  Don&#8217;t forget to factor in leftovers!</p>
<p><strong>-You will need 24 hours per 5 pounds of turkey to thaw.</strong> Make sure you set our your turkey with enough time to spare! <p>That&#8217;s why, when I saw these <a rel="nofollow" href="http://www.amazon.com/Chicago-Metallic-4-cup-Nonstick-Multi-Tier/dp/B00188HVXW/ref=pd_sbs_k_4/103-7121206-9414239" target="_blank">mini wedding cake pans on Amazon</a>, I could not stop thinking about them.  I can&#8217;t wait to host a bridal shower or engagement party and make a tiny cake for each guest with these adorable tins.  Better yet&#8211;gather the bridal party together and make a night of baking and decorating the cakes to surprise the bride with.  Who wouldn&#8217;t love such a sweet treat?!</p>
